Curry Powder
Madras Curry PowderYield: 1 cup
30 ts Red New Mexican chile 2 ts Fenugreek seed
4 ts Cayenne 2 ts Black pepper
24 ts Coriander seed 6 ts Cardamom
24 ts Cumin seed 2 ts Cloves
1 ts Ginger
All dried and ground separately and then ground together. If each
part is 1 teaspoon, the yield is 1 cup.
Malabar Curry Powder
Yield: 1 batch
34 g Tamarind 2 g Cumin
44 g Onion 3 g Fenugreek
20 g Coriander 2 g Black pepper
5 g Cayenne 2 g Mustard, powdered
3 g Turmeric
Grind all ingredients together. Makes about a quarter pound.
