FIVE-SPICE POWDER

This ancient condiment is found all over China and is used as a

seasoning and condiment.

FIVE-SPICE POWDER

40 Szechuan peppercorns

2 cinnamon sticks 2 in. (5 cm) long

1 1/2 t fennel seeds

12 whole cloves

2 whole star anise

Place the spices in a mortar or spice grinder and grind to a fine

powder. Transfer to a spice jar and keep tightly covered
