Lithuanian Cheese Dumplings

This is a Lithuanian recipe I learned from mother.  Despite the name,

there is only cottage cheese.

Lithuanian Cheese Dumplings

8 oz of cottage cheese (preferably small curd)

1 egg

Approximately 1/2 cup of flour

Pinch of Mint

1 pot of boiling water

1 tbsp of uncooked bacon (optional)

Mix cottage cheese, egg, bacon (if desired) and mint. Add flour

and knead until the mixture is no longer sticky.

Roll out dough into balls slightly smaller than golf balls. Roll

them in flour to coat.

Drop in boiling water and cook for 12 minutes (20 minutes if bacon

is added). Drain and serve as a side dish with butter and sour

cream.
