Dumplings

Makes 8 - 10

200 g self raising flour

1/2 teaspoon salt

100 g shredded suet

1/2 teaspoon dried mixed herbs; optional

cold water

Mix the dry ingredients with water to a soft, elastic dough, roll into

balls and add to soups or stews half an hour before serving.

VARIATIONS

Herb Dumplings

Include half an onion, finely grated, and increase herbs to 1 teaspoon.

Cheese Dumplings

Add 25g grated cheddar or 1 tablespoon grated Parmesan cheese.

Watercress Dumplings

Add 1 tablespoon chopped watercress.

Curry Dumplings

Add 1/2 teaspoon mild curry powder.

Paprika Dumplings

Add 1/2 teaspoon paprika.

Caraway Dumplings

Add 1 teaspoon caraway seeds.
