POTATO GNOCCHI

500g mashed potatoes

3/4 cup semolina

2 cups milk

2 eggs

salt and pepper to season

nutmeg to season

Savoury Sauce

425g can savoury tomatoes

2 Tbs fresh herbs

pepper to season

Add semolina, milk and egg to the mashed potatoes and beat well.

Season with salt, pepper and nutmeg, and cook over a moderate heat,

stirring constantly for 5 minutes until the mixture becomes quite

thick. Allow to cool. Roll into balls and flatten into patties,

then dust with flour or extra semolina. Pan fry in a little hot

butter. Serve hot with the sauce. Sauce. Empty the can of tomatoes

into a saucepan and simmer 5 minutes. Add herbs and season with

pepper.
