BAKED APPLE DUMPLINGS

6 pared, cored, tart apples

1 cup sugar

2 cups water

3 tablespoons butter

1-3/4 teaspoons cinnamon

1/2 cup sugar

1 tablespoon butter

heavy cream

Roll out pastry to 1/8 inch thickness on a floured surface. Cut

pastry into 6 square sections. Place an apple in center of each

section. Combine 1/2 cup sugar and cinnamon. Fill apple cavities

with cinnamon mixture. Dot with 1 tablespoon (total) butter. Fold

pastry over each apple. Place in a baking dish. In a pot combine

1 cup sugar, water, and 3 tablespoons butter. Boil for 3 minutes.

Pour hot syrup around dumplings. Bake at 425: for 40 to 45 minutes

until browned. Serve with cream. Yields 6 dumplings. Very sweet.

Pastry

2 cups flour

2/3 cup shortening

1 teaspoon salt

7 tablespoons water.

Cut shortening into flour and salt. Add water. Mix until dough

just begins to cling together.
