Crustless Potato Quiche
10 eggs3/4 cup skim milk
1/4 cup half and half
2 cups grated cheese
1/2 cup grated onion (optional)
1 cup chopped ham (optional)
1/4 teaspoon salt and black pepper
2 teaspoons tabasco
24 ounces Ore-Ida frozen O'Brien potatoes
Whisk together eggs, milk, and add rest of ingredients. Pour into
2 greased casserole dishes. Bake (uncovered) at 375 degrees for 45
minutes or until light brown. Let rest 10 minutes, then cut into
squares.
