Roasted Chile Eggs (Huevos Hervaldo)
Slice two pieces of crusty bread. Cover each with a slice or twoof ham and a layer of roasted chilies. Cover with grated extra-sharp
cheddar and toast. Top each with a poached egg and season with
black pepper, chili powder, and garlic powder.
Serve with red salsa and sour cream.
