Fish and Brewis
Here it is from "My Personal Touch" cookbook page 112, which was published by alady in NFLD and sent to me for Christmas by my sister in Nova Scotia:
Fish and Brewis
First Step:
5 pieces of hard bread
Soak in cold water for 24 hours.
Second Step:
1 lb. salt fish
8 strips of bacon
2 large onions
1 tbsp butter
Fry bacon and drain fat, cut bacon in small pieces.
Chop 2 large onions and put in bacon pan (make sure bacon is removed).
Put cover on and steam on slow heat until tender.
Put the soaked dry bread with the water in a saucepan and boil for 1 minute.
Drain well.
Cook fish until tender (depending on the saltiness of it, you may want to cook
it twice).
Remove bones and add to the drained hard bread.
Add cooked onions and bacon.
Stir.
Add the tbsp butter and stir.
Serve very hot.
This serves 6 people.
