French Mint Creams

   1      cup           butter

2 cups powdered sugar -- sifted

4 squares unsweetened chocolate -- melted

4 eggs

1 teaspoon peppermint extract

2 teaspoons vanilla

18 vanilla wafers

1 cup heavy cream -- whipped

maraschino cherries

Cream butter and sugar; blend in melted chocolate. Add eggs and beat well

after each egg. Add flavorings. Using 18 cupcake/muffin liners, put a

vanilla wafer in the bottom of each and then fill with chocolate mixture 3/4

full. Place a dollop of whipped cream on each and top with a cherry. Freeze

in muffin pans to retain shape. After the creams are frozen, they may be

stored in plastic bags. Serve frozen.
