Pate Brisee #2

  servings: 1

2 c flour

1 t salt

2/3 c unsalted butter

1 ea egg

1 t water

combine flour and salt in a bowl

cut in butter to resemble coarse crumbs

combine egg and water

add to flour mixture and stir just until mixture holds together

pat dough into a rectangle

wrap in plastic and chill for 60 minutes

rollout dough to a thickness of 1/8-inch

cut to the size of tart or tartlet pan

press into tin, prick with a fork

bake @ 375 degrees for 10 minutes to partially bake

bake @ 375 degrees for 4-8 minutes more to completely bake fill as

desired
