German Apple Pancakes (4 servings)

6 eggs

pinch salt

2-3 tbs sugar

1 pt milk

1 c flour

1 pound apples

3 tbs butter for frying

Combine eggs with salt, sugar and milk. Add flour spoon by spoon

without producing lumps. Give some of the butter into a skillet

and pour 1/4 of the pancake mixture into the skillet. Distribute

evenly 1/4 of the apple slices over the pancake mixture and bake

at low heat until the lower side of the pancake is golden brown

(take care that it does not burn). Now turn the pancake by means

of a plate or a saucepancover having the size of the skillet. Add

again some butter and fry until the apples are golden brown. When

the pancake is done, slide it on a plate and sprinkle it with a

sugar-cinnamon mixture. Eat at once.

Bake three more pancakes in the same way.
