Lightening Cake (Blitzkuchen)

1/2 cup butter 

1/2 cup margarine

1 cup sugar

3 cups self rising flour

4 eggs

juice and zest of 1 lemon

pinch salt

grated cinnamon

Cream together the butter, margarine and sugar. Beat in the eggs

one at a time, beating well after each addition. Stir in the flour,

then the lemon juice and rind.

Turn the mixture into a baking pan and spread it out evenly.

Sprinkle some sugar and grated cinnamon over the top. Bake in a

moderate preheated oven (350F, 180C, Gas Mark 4) for approximately

20 minutes.
