4 veal cutlets
1 tbs. flour
1 1/2 oz breadcrumbs
1 3/4 oz fat for frying
1/4 pt water
3 tbs. sour cream
chanterelles or soletus edulis, fried in some butter
Bread the cutlets with salted beaten egg, flour and breadcrumbs,
and fry it from both sides until brown. Give them on a plate and
keep warm. Now you add the water and sour cream to the brown fat
in the frying pan, stir. Top the cutlets with a heap of mushrooms
and pour some sauce over the whole lot. Garnish with some parsley.
Serve with pommes frites and green salad.
