Indian Cauliflower and Potatoes

2-3 potatoes, peeled

head of cauliflower

gram masala, just a pinch

red chili flakes

cumin seed, as many as you like

ginger, peeled and small dice (maybe 2 tsp.)

vegetable oil

salt

Cut the cauliflower and potatoes into small pieces. Put oil (enough

to coat a large frying pan generously) cumin seeds, ginger in a

frying pan and cook 3-5 minutes. Add the cauliflower and potatoes.

Add some Garam masala and red chilies and mix well, sprinkle salt

over.. Cook over medium heat 7-10 minutes, stirring often to keep

the vegetables from sticking. Reduce heat to low and cover pan.

The steam will continue to cook the vegetables. I sometimes add

a very small amount of water to the pan at this point. Continue to

steam until the vegetables are tender. Jan
