Curried Chicken

1 cup rice

1 cup pineapple juice

1 Tbs butter

1 medium onion, diced finely

1 clove garlic, peeled

2 cups cubed cook chicken (I use the leftovers from a roasted chook)

1 Tbs curry powder

1/2 tsp ginger

1/4 tsp paprika

1 cup chicken stock (I cheat and use a bouillon cube)

1/4 cup sultanas

salt to taste

1 Tbs butter

1 Tbs flour

1 cup milk

1/2 tsp salt

Make as for normal white sauce.

Cook rice, in the pineapple juice and the water. Keep rice hot.

Cook onion and garlic in butter until the onion tender. Discard

the garlic. add onion to the sauce with chicken, curry powder,

ginger and paprika. Heat chicken stock, add sultanas and bring to

the boil; stir the mixture into the sauce. Season to taste with

salt and bring to the boil. Serve over the rice. You can garnish

it with anything you like nuts, spring onions, hardboiled eggs etc.
