DHAL SAG

11/2 cups mixed dhal

1 lb (450g) spinach

1/2 teaspoon turmeric powder

1 teaspoon salt

1/2 teaspoon chilli powder

2 tablespoons ghee

1 onion, chopped

1 teaspoon mustard seeds

1/2 teaspoon cumin seeds

1 teaspoon garam masala

Wash the dhal and leave to soak. Wash the spinach and chop finely.

Boil 3 cups of water and add the drained dhal, turmeric, salt and

chilli. Cook for 5 minutes and add the spinach. Keep on a medium

heat till most of the moisture has gone. Meanwhile heat ghee and

fry the onions, mustard seeds and cumin seeds till golden. Stir

into the dhal and spinach with a teaspoon of garam masala. Keep

on a moderate heat till cooked. The dish is dry, but add a little

water to prevent catching. Serve hot with rice.
