Title: Irish Potato Stew

Irish Potato Stew
5 med. potatoes -- peeled -- coarely chop (5 to6)
1 small onion
roux
2 slices bacon -- chopped (2 to 3)
salt and pepper -- to taste
boiling water
Peel potatoes and cut coarsley. Make a roux. Brown one onion in roux. Add
chopped bacon, if desired. Add potatoes and let smother for about 5 minu
tes. Add boiling water, salt and pepper to taste and let cook until potat
oes are done.
NOTES : As a child this was served over grits for breakfast. Can add slic
ed hot dogs, 1 chicken bouillon cube, garlic and parsley.
