Miniature Potato Knishes

        I went on a net-hunt to find a  knish recipe. I remember seeing

a request for a knish recipe here. Here is what I found in a collection

of Passover recipes:

Miniature Potato Knishes

3 cups mashed potatoes

2 eggs, slightly beaten

2 tbsp Margarine

1 tsp salt

1/8 tsp pepper

3/8 cup matzah meal

1 egg yolk beaten with 1 tbsp water

oil for baking sheet

in bowl, combine mashed potatoes with eggs, margarine, salt, pepper, and

matzah meal.

(may saute a diced whole onion until nice and brown, then add)

Form into walnut-sized balls

Brush with diluted egg yolk

Place on baking sheet(greased!) and bake in pre-heated oven at 400 degrees

Farenheit for 20 minutes or brown.
