Broiled Lamb Chops with Mustard Honey Glaze

1/4 cup dijon mustard

1/4 cup honey

1 teaspoon soy sauce

1 clove garlic -- minced

1/4 teaspoon ground ginger

4 large lamb shoulder chops -- round bone or blade

Mix together first 5 ingredients. Trim excess fat from chops; slash

through remaining edge fat to, but not into, meat at 1-inch intervals.

Place chops on a rack in a broiler pan. Generously spread chops with

about half the mustard mixture. Broil about 3 inches below heat for 5

minutes, turn chops and spread with remaining mustard mixture. Broil for

about 5 more minutes or until chops are browned and meat near bone is

still pink when slashed.
