Lamb Chops

4 lamb chops, 1 1/2" thick 

1 cup cashews ( pulverized in a food chopper)

1/8 tsp ground cloves

1 Tbsp crushed garlic

1 Tbsp Italian bread crumbs

1 egg with 2 Tbsp milk for a wash

1/8 tsp cayenne pepper

1/4 cup peanut oil

4 Swiss cheese slices

1 red onion, sliced

1 red bell pepper, sliced

anchovy fillets, optional

In a heavy skillet heat the oil until almost smoking.

In a separate dish mix cashews, cloves, bread crumbs, pepper. Dip

the lamb chop into egg wash then into dry mix. Place into hot

skillet for 1 minute per side, then remove and place on a broiling

dish. Top with the rest of the ingredients (cheese goes on first)

and end with the anchovy. Broil in the broiler for about 12 minutes.

Serve hot.

Now for the sides, A fresh garden salad works well and I would do

a starch using Broiled red potatoes and a veggie of Marinated grill

Portabella Mushrooms. A nice Cabernet Sauvignon works well and

pinnapple upside down cake.
