Braised Lamb Shanks
Serves 22 meaty lamb shanks
1/2 Tbsp olive oil
1/2 Tbsp butter
1 jar commercial spaghetti sauce
olives (optional)
canned mushrooms (optional)
pearl onions (optional)
sliced carrots (optional)
Preheat oven to 350. On stove top, heat an oven-safe pan over
medium-high heat. When it is hot, add oil and butter. When it is
smoking hot, add lamb shanks and sear to brown on all sides. (That
means don't move it unless you're planning to turn it.) Remove from
heat and drain off remaining fat. Add spaghetti sauce and optional
ingredients. Cover pan tightly and place in oven. Bake for 1 to 1
1/2 hours, or until lamb is done and tender. Serve over hot noodles.
