BUTTERFLIED LEG OF LAMB
1 (5 TO 6 LB) Leg of lamb boned and butterfliedbruised fresh mint leaves
1 cup olive oil
coarsely ground black pepper
2 cloves garlic, minced
3/4 cup red wine
juice of 2 lemons
Marinate lamb 2 hours or more in a mixture of mint, oil, pepper,
garlic, wine and lemon juice. Broil uncovered over hot coals as
for steak for 45 minutes, or to desired degree of doneness, turning
once or twice. From time to time baste with marinade. Slice on
the bias.
6 to 8 servings
