Brine

1.5 cups Morton Tender Quick Salt

1 cup brown sugar

4 quarts water

3 bay leaves

1 tsp Lawrey Seasoned Salt

1 tsp Garlic Salt

Pepper

1 tbsp Baking soda

Mix above in a porcelain crock. Marinate fish overnite. Rinse, pat with

paper towels, and air dry for 1 hour. Cook in 350 oven for 15 minutes.

Smoke for 3 hours or more until desired dryness is reached using cherry

or applewood chips.
