Brine for Smoking Fish

1/3 cup sugar

1/4 cup non-iodized salt (pickling salt)

2 cups soy sauce

1 cup water

1 cup dry white wine (or beer)

1/2 tsp. each; onion powder, garlic powder, black pepper, Tabasco

Sauce

Mix thoroughly

Brine salmon, steelhead (or other large trout) chunks at least 8 hrs.

Rinse thoroughly and pat dry. Then let air dry at least one hr. prior

to smoking.

1-1/2# salt

1/2# (1-1/8 c.) brown sugar

1 tsp onion powder

4 bay leaves, crushed

brine cure for 8 hrs. wash and let dry.
