Catfish Marinade
2 tablespoons of lemon juice or red wine vinegar1 1/2 tablespoons extra virgin olive oil
3 fresh garlic cloves, minced
2 teaspoons of Italian Seasoning
cracked pepper to taste
Mix ingredients together to form a paste. Spread on both sides of
filets and sprinkle with cracked pepper. Marinate fish in refrigerator
for 1 hour. Best if cooked on the grill, preferably using the tin
foil packet method.
