Subject: Barbecue Chicken Marinade

BARBECUE CHICKEN SAUCE

        1 cup apple cider vinegar

1/2 cup vegetable oil

3 Tablespoons molasses

1 Tablespoon salt

1 teaspoon Tabasco

Bring all ingredients to a boil. Pour over prepared chicken.

Marinade several hours or overnight. If using boneless, skinless

chicken breast marinade at least 1/2 hour. Grill till done basting

occasionally. I now use the chicken breast and grill on a gas grill

for about 15-20 minutes, when using whole chicken it would take

about 50 minutes using charcoal fire with racks about 10" from coals.

If using coals, keep water close at hand, as sauce will cause coals

to flare.

Over the years I have tried many sauces and marinades but always

come back to this as my favorite. Originally came from a local cookbook

and was listed as Shaeffer's Bar-B-Que Chicken Sauce. They are a local

caterer in the Shenandoah Valley, VA with quite a reputation for BBQ

chicken and pork. Not the sauce they use now.
