Chicken Marinade

1/4 cup crushed garlic

1/4 cup Dijon mustard

1/4 cup oil

1/4 cup vinegar (I use a mix of cider and wine with a bit of balsamic

thrown in for flavour)

This is quite thick and yes it has a lot of garlic but it's really good.

Let the meat marinate for about 1/2 hour or longer. To grill eggplant,

cut in 1 inch rounds and grill for about 2-5 min on each side. Don't over

cook, it should be firm but not mushy.
