CUMIN RUB
Use this rub on pork or beef before grilling. First, coat the meat allover with olive oil, then add just enough of the rub to make a
light sprinkling.
3/4 cup ground cumin
1/4 cup ground coriander
1/2 cup hot chili powder
2 tablespoons paprika
1 tablespoon ground allspice
1/4 cup kosher salt
1 tablespoon cracked black pepper
In a bowl combine the cumin, coriander, chili powder, paprika,
allspice, salt, and pepper. Store the rub in a jar with a tight-fitting
lid. Keep in a cool, dark place. Makes about 2 cups.
