Black Bean Burritos

2 15 oz cans Black Beans

1 cup frozen corn

1/2 cup chopped onion

juice of 1/2 lime

1/2 teaspoonful salt

1 tablespoonful ground cumin

1 tablespoonful chili powder

1 teaspoonful ground black pepper

1/2 cup chopped fresh cilantro leaves

4 cups cooked white rice

large flour tortillas

sour cream

ground cheddar cheese

Optional: Tortilla chips and Salsa

Instructions:

Mix black beans, corn, chopped onion, lime juice, salt, cumin, chili

powder, black pepper and cilantro in medium saucepan. Allow mixture to sit

for 30 minutes if possible. Heat black bean mixture thoroughly.

Into each tortilla, first spread a small amount of sour cream. Spoon

about 1/2 cup rice, 1/2 to 3/4 cup black bean mixture and sprinkle with

cheese. Roll up each burrito and serve hot.

Optional may serve with tortilla chips and salsa as a side dish.
