SHREAD BEEF FILLING FOR BURRITOS

large chuck steak

water

1/4 tsp. oregano

1/4 tsp. garlic powder

salt to taste

1 cup celery, chopped

3 medium carrots, chopped

1/2 cup green olives, chopped

1/4 tsp. pepper

1/4 tsp. salt

This is a tried and true recipe that my wife makes it's called

BIRRIA (Beer-e-ya). You need a large chuck steak, you place the

steak in a large oven-proof skillet, cover with water. Add oregano,

garlic powder, and salt to taste. Cover skillet and simmer about

1 hour or until the meat can be shredded. Remove the meat from the

skillet, save the broth.

After the meat is shredded, return to the skillet and broth, add

the chopped vegetables, add pepper and salt, or to taste. Place

the skillet in the oven and cook at 325 degrees until the juice is

reduced, so that it is not too soupy.
