Smothered Burritos

2 pounds ground beef or turkey

1 onion, chopped

1 clove garlic, minced

2 envelopes dry enchilada sauce mix

4 oz canned picante sauce

1-2 cans refried beans

2-3 cups colby or marble cheese

12 large flour tortillas

16 oz tomato sauce or puree

Preheat oven to 325. Brown beef or turkey, drain fat and season

with o nion, garlic, 1 envelope of enchilada sauce mix and picante

sauce. Lay er in tortillas; beans, beef mixture, grated cheese.

Roll up each burrito and place in a greased 9x13 casserole pan.

(Should make 10 large burritos, using 3/4 of the beef mixture, 3/4

of the cheese and all of the beans). To the ground beef mixture

that is left, add tomato sauce and 1 envelope of dry enchilada

sauce mix and simmer. Spoon over burritos, then add remaining

grated cheese. Bake for 30 minutes or until hot. Serve with

chopped lettuce and tomatoes. Serves 10.
