Chilaquilles
Great recipe for Tortilla crumb chicken Marcia!Heres mine.
Chilaquilles
1 bag tortilla chips
2 cups shredded cooked chicken
1 cn green tomatillo salsa or red enchilada sauce
1/2 c sauteed diced onions (optional)
2 cups shredded cheese your choice (jack is nice)
In a deep, greased, 1qt casserole dish, layer the ingredients
in the following order:
Cover the bottom completely with chips one layer deep, smash them down to
make them relatively level.
Cover them with a layer of chicken, once again one layer deep. (no need
to smash the chicken)
Then, the onions and the sauce. If you are using the green salsa, make
sure that you use plenty, the casserole needs to be quite moist. It will
be spicy! If you use red sauce, it is much more liquid and will suffice
more sparingly.
Top everything off with a nice layer of cheese. Repeat the process until
you fill the dish, the top layer should be chips with cheese on top.
After every addition of chips smash the whole casserole down, then
continue to layer. Bake at 325 degrees for 30 minutes or so, until hot
throughout and bubbly.
