Chile Rellenos (Stuffed Green Chile)

This is a recipe from the "New Mexico Cook Book" by Lyn Nusom.

8 fresh Green Chiles 1/2 tsp. Garlic Salt

1 cup grated Longhorn (or 1/2 tsp. Baking Powder

Velveeta) Cheese 2 Eggs, well beaten

1/2 cup all-purpose Flour 1 cup Cooking Oil

1 tsp. Paprika

Roast and peel chiles, cut off the top of pod and remove seeds. (A boning

knife works well for this job.) Divide cheese equally among chiles and

fill each chile with cheese (you can fill them either through the top or

cut a slit down the center). Mix flour, paprika, garlic salt and baking

powder together, and roll each chile in the flour mixture, then egg.

Refrigerate for 15 minutes. Heat oil and fry chile in hot oil until golden

brown. Place in an oven-proof serving dish and keep warm in a warm oven

until all the chiles are done.

Serves 4.
