Low-Fat Carrots Au Gratin

2 Tablespoons fat free butter

1/2 cup corn flake crumbs

1/3 cup vegetable broth

1 small onion, chopped

3 Tablespoons all purpose flour

Salt & Pepper to taste

1 1/2 cups lite evaporated milk

1 cup fat free shredded American cheese

4 cups sliced carrots, cooked & drained

1 Tablespoon dried parsley flakes

In small glass mixing bowl, microwave butter on high until melted.

Add corn flake crumbs to butter and mix well. Set aside for topping.

In medium microwave dish, place broth and onions. Microwave on high

for 2 1/2 minutes or until onion is tender.

Meanwhile in blender combine flour, salt & pepper and milk. Mix on

high for one minute or until smooth.

Add milk mixture gradually to onions. Stir with wire whisk until

smooth. Microwave on high for 5 minutes or until sauce has thickened,

stir twice during cooking. Add cheese, stir until melted. Stir in

carrots and parsley. Microwave on high for 4 minutes or until

sauce is bubbling.

Sprinkle crumb mixture evenly over top of carrot mixture. Microwave

on high for 1 more minute. Let stand 5 minutes before serving.

Makes 8 servings;
