Koshary (Vegetarian Mix)
Koshary (Vegetarian Mix)2 cups rice, cooked
2 cups small macaroni, cooked
1 cup small black lentils (mejadra), cooked
1/2 cup hommos shami, cooked2 cups tomato juice
1 tablespoon tomato paste
1 small onion, chopped
oilcrushed garlic
1/2 cup vinegar
1/2 cup lemon juice
Heat the oil in a small pan and fry the chopped onion till it's
golden. Add tomato juice plus the tomato paste and 1/2 cup
of water and wait till it boils a little then remove from heat.In another bowl combine the crushed garlic with the lemon juice
and vinegar and leave for one hour till flavours blend well.In a plate combine equal amounts of boiled rice, macaroni, mejadara
and little hommos.Put some of the tomato sauce and the garlic sauce on top.
