Sabzee (Herb Salad)
Sabzee (Herb Salad)4 cups arugula or spinach greens or a mixture of radish and basil sprouts
1/4 cup italian parsley
1/4 cup cilantro
1/4 cup dill leaves
2 tablespoons chopped mint
2 scallions
several celery or lovage leaves
salt
lemon juice to tasteWash and dry all the ingredients. Tear the arugula or spinach into
bite-size pieces and roughly chop the herbs; trim and slice the
scallions. Toss everything together with a few pinches of salt,
then add lemon juice to taste.
