Bran Muffins
2 cups whole wheat flour2 cups wheat bran
1 tsp baking soda
1/2 tsp baking powder
2 egg whites
2 cups skim milk
1/2 cup apple juice concentrate
1/2 tsp cinnamon
1/8 tsp cloves
1/8 tsp nutmeg
1/2 tsp vanilla
Sift together all dry ingredients except bran. Add bran, milk and
juice concentrate. Add stiff egg whites.
Divide batter among 12 muffin cups (lined with muffin papers).
Bake 20 minutes, or until muffins are springy to the touch and
lightly browned, at 400 degrees (preheat the oven).
