Diabetic, Low-Fat, Cherry Clafouti
nonstick spray1/4 cup plus 3 tbsps. egg substitute
1/3 cup sugar
several drops almond extract
1 1/4 cup skim milk
1/3 cup flour
2 cup pitted, dark sweet cherries or one 16 1/2 0z. can pitted, dark sweet
cherries, well drained
sifted powdered sugar (optional)
finely shredded orange peel (optional)
Generously spray a 2-quart square baking dish or a 10-inch quiche
dish with nonstick coating. Beat together eggs, sugar, and almond
extract in a medium bowl with wire whisk till combined. Blend in
milk. Gradually add flour, beating with whisk till smooth. Pour
batter into prepared dish. Sprinkle cherries on top batter. Bake
in a 350 degree oven for 25 to 30 minutes or till a knife inserted
comes out clean. If desired, sprinkle with sifted powdered sugar
and shredded orange peel. Makes 8 servings.
