LOW-FAT FAST CHICKEN & RICE

1 lb. skinless, boneless chicken breast

3 cups. Minute Rice

3 cups water

1 stalk celery, chopped

1 tbsp. chopped bell pepper

1 tbsp. chopped onion

1/4 tsp. poultry seasoning

1/4 tsp. salt

1/4 tsp. pepper

Cut chicken into bite size pieces and cook in a large skillet oiled

with Pam. Add chopped celery, bell peppers, onion and seasonings.

When chicken is lightly browned pour in 3 cups of water and bring

to a boil. Pour in minute rice and bring back to a boil and cover.

Turn off the heat and let stand for five minutes. Makes 6 servings.
