LOW-FAT HOT CHOCOLATE SOUFFLE

nonstick cooking spray

2 tbsps. granulated sugar, divided

2 containers ( 6 ozs. each) chocolate nonfat yogurt, any flavor works

1/2 c. cholesterol-free, fat-free egg substitute

2 tbsps. all-purpose flour

3 egg whites

nonfat frozen yogurt, optional

Preheat oven to 375 degrees. Coat a 1 1/2 quart souffle or casserole

dish with nonstick cooking spray; coat with 1 tbsp sugar. In a

large bowl, combine chocolate yogurt, egg substitute and flour;

set aside. In a medium bowl, with electric mixer at high speed,

beat egg whites and the remaining 1 tbsp. sugar until firm but not

dry. Fold egg whites into yogurt mixture and pour into prepared

dish. Bake 30 to 35 minutes. Serve immediately with frozen yogurt.

Makes 8 servings.
