All purpose Cajun seasoning salt
.5 lb salt.5 oz Chili powder
1.2 oz whole black pepper
.3 oz whole white pepper
.8 oz granulated onion
1.3 oz granulated garlic
.6 oz paprika
.8 oz cumin
.6 oz fennel
.4 oz celery seed
.3 oz dried thyme
Place all ingredients into blender. mix until even consistency.
To blacken meat with this, mix into a 'paste' with clarified butter, or
olive oil. coat meat with paste and place on VERY hot cooking surface.
Unless ventilation is excellent, this should only be done outdoors.
